Ei, Milch und Wasser verr\u00fchren. Nach und nach zum Mehl geben, bis ein z\u00e4hfl\u00fcssiger Teig entsteht. Fleisch beigeben, mit Pfeffer und Muskatnuss w\u00fcrzen. Kr\u00e4uter fein schneiden, beigeben und gut mischen. Teig ca. 20 Minuten ruhen lassen.<\/li>\n<li>Mangoldbl\u00e4tter in siedendem Wasser kurz blanchieren. Mit eiskaltem Wasser abschrecken und trocken tupfen. Auf die Arbeitsfl\u00e4che legen. Stiele wegschneiden. Pro Blatt ca. 1 Essl\u00f6ffel F\u00fcllung in der oberen Mitte platzieren, L\u00e4ngsseiten der Bl\u00e4tter auf die F\u00fcllung legen, Bl\u00e4tter einrollen oder zu P\u00e4ckli falten. Bei grossen Bl\u00e4ttern eventuell den Rest des Blattes wegschneiden. Backofen auf 200 Grad vorheizen. Bratbutter und \u00d6l in einer Bratpfanne erhitzen. Capuns portionenweise beidseitig kurz anbraten. In eine ofenfeste Form legen.<\/li>\n<li>\u00d6l heiss werden lassen, Speck anbraten, Weisswein dazu giessen und einkochen. Rahm beigeben, aufkochen und ca. 5 Min. k\u00f6cheln lassen, w\u00fcrzen.
