bicentenaire de l\u2019entr\u00e9e de Neuch\u00e2tel dans la conf\u00e9d\u00e9ration, la f\u00eate des vendanges animera les ruelles de la capitale du 26 au 28 septembre prochains. Parmi les sp\u00e9cialit\u00e9s viticoles du canton, l'\u0152il-de-Perdrix est certainemment la plus r\u00e9put\u00e9e. Nous aurions pu glisser une bouteille dans la Box, mais nous avons pr\u00e9f\u00e9r\u00e9 vous surprendre avec des truffes \u00e0 l'\u0152il-de-Perdrix. Ce produit phare du terroir neuch\u00e2telois est fabriqu\u00e9 par la confiserie Wodey-Suchard en plein c\u0153ur de la zone pi\u00e9tonne de Neuch\u00e2tel. Fond\u00e9e en 1825 par Philippe Suchard (le fondateur de la marque bien connue), c\u2019est la plus ancienne confiserie de Suisse et le plus vieux commerce de la ville. Les truffes sont d\u00e9licieuses avec un vin liquoreux, un \u0152il-de-Perdrix (logique\u00a0!), ou un caf\u00e9. Sachez qu\u2019il faut \u00e9viter de les mettre au frigo, elles se conservent mieux \u00e0 l\u2019abri de la lumi\u00e8re \u00e0 une temp\u00e9rature entre 17 et 20 degr\u00e9s.<\/p><p>\u00a0<\/p><p><span style=\"font-size: 18pt;\"><strong>#2 \u2013 <\/strong><span style=\"font-family: 'SketchFlow Print';\">Cr\u00e8me de caramel au sel des Alpes, Cr\u00e8me Renversante, <a href=\"https:\/\/goo.gl\/maps\/OZ6E4\" target=\"_blank\">Les Ponts-de-Martel<\/a><\/span><\/span><\/p><p>Cr\u00e8me renversante, des douceurs \u00e0 tomber par terre\u00a0! C\u2019est le nom qu\u2019a donn\u00e9 Val\u00e9rie Henchoz \u00e0 sa petite entreprise sise aux Ponts-de-Martel. Elle produit dans son atelier install\u00e9 dans une ferme perdue au milieu des tourbi\u00e8res des caramels prim\u00e9s \u00e0 maintes reprises au concours suisse des produits du terroir. Le musicien Marylin Manson compterait d\u2019ailleurs parmi ses clients.<\/p><p>La fabrication de caramel est plus capricieuse que ce qu\u2019on pourrait penser. La temp\u00e9rature, l\u2019humidit\u00e9 et la m\u00e9t\u00e9o jouent un r\u00f4le important. Ainsi, si le ciel des montagnes neuch\u00e2teloises est sombre, inutile de lancer une cuisson, \u00e7a ne marchera pas, dixit Val\u00e9rie\u00a0! Promis, malgr\u00e9 l\u2019\u00e9t\u00e9 maussade, Val\u00e9rie a profit\u00e9 d\u2019un rayon de soleil pour vous concocter cette Cr\u00e8me de caramel au sel des Alpes. Elle est tout simplement renversante sur les cr\u00eapes, accompagne \u00e0 merveille les desserts ou suffit \u00e0 elle-m\u00eame sur une tranche de pain.<\/p><p>\u00a0<\/p><p><span style=\"font-size: 18pt;\"><strong>#3 \u2013 <\/strong><span style=\"font-family: 'SketchFlow Print';\">Sirop de Dents-de-Lion, Le Panier de la F\u00e9e, <a href=\"https:\/\/goo.gl\/maps\/Xy3m1\" target=\"_blank\">Le Sapel<\/a><\/span><\/span><\/p><p>Au fond de la magnifique Vall\u00e9e des Ponts, il faut emprunter une petite route en direction de Travers pour se rendre \u00e0 la ferme d\u2019Eliane Fl\u00fcck, en bord\u00e9e d\u2019une for\u00eat d\u2019\u00e9pic\u00e9as. C\u2019est ici, sous le nom \u00ab\u00a0Le Panier de la F\u00e9e\u00a0\u00bb, qu\u2019elle con\u00e7oit des produits aux saveurs atypiques. Nous avons choisi de vous faire d\u00e9couvrir son sirop de Dents-de-Lion, m\u00e9daill\u00e9 d\u2019or en 2009 au Concours suisse des produits du terroir. Ces derniers sont r\u00e9colt\u00e9s dans les champs adjacents, un travail tr\u00e8s physique\u00a0! Il se d\u00e9guste avec de l\u2019eau fra\u00eeche \u00e0 temp\u00e9r\u00e9e, car le go\u00fbt ressort de fa\u00e7on plus nette \u00e0 temp\u00e9rature ambiante. Eliane nous conseille aussi de le go\u00fbter avec du th\u00e9 noir\u00a0! Une fois ouvert, se conserve environ 2 mois au r\u00e9frig\u00e9rateur.<\/p><p>\u00a0<\/p><p><span style=\"font-size: 18pt;\"><strong>#4 - <\/strong><span style=\"font-family: 'SketchFlow Print';\">Gel\u00e9e de fraises au vin mousseux de Mauler, Au Grenier Gourmand, <a href=\"https:\/\/goo.gl\/maps\/0wpzU\" target=\"_blank\">Travers<\/a><\/span><\/span><\/p><p>La Maison Mauler situ\u00e9e \u00e0 M\u00f4tier dans le Val-de-Travers est le plus grand fabricant de vin mousseux de Suisse. Situ\u00e9e non loin de l\u00e0, \u00e0 Travers, la famille Givord cr\u00e9e des produits de mani\u00e8re artisanale. Ce n\u2019est donc pas surprenant qu\u2019un jour quelques gouttes de \u00ab\u00a0champagne\u00a0\u00bb soient tomb\u00e9es sur des fraises ! A d\u00e9guster sur du pain, lors d\u2019un brunch, avec un verre de Mauler \u00e0 la main\u00a0!<\/p><p>\u00a0<\/p><p><span style=\"font-size: 18pt;\"><strong>#5 \u2013 <\/strong><span style=\"font-family: 'SketchFlow Print';\">Absinthe La Clandestine, Artemisia, <a href=\"https:\/\/goo.gl\/maps\/0Yo3c\" target=\"_blank\">Couvet<\/a><\/span><\/span><\/p><p>Qui dit terroir de Neuch\u00e2tel, dit naturellement absinthe. C\u2019est Claude-Alain Bugnon qui nous accueille \u00e0 Couvet au Val-de-Travers. C\u2019est ici que la premi\u00e8re absinthe aurait \u00e9t\u00e9 cr\u00e9\u00e9e durant la seconde moiti\u00e9 du 18\u00e8me si\u00e8cle. Interdite de 1910 \u00e0 2005, Claude-Alain a \u00e9t\u00e9 un des premiers clandestins \u00e0 sortir de l\u2019ombre, m\u00eame si le nom la \u00ab\u00a0Clandestine\u00a0\u00bb est rest\u00e9. Elle est bas\u00e9e sur une recette de 1935 provenant d\u2019une distillatrice bien connue \u00e0 l\u2019\u00e9poque. Elle a gagn\u00e9 en 2006 un Absinthe D'Or avec 19 points sur 20 et est d\u00e9sormais appr\u00e9ci\u00e9e aux quatre coins de la plan\u00e8te (lors de notre visite, il pr\u00e9parait une palette pour l\u2019Australie).<\/p><p>Pour la d\u00e9guster, mettez la moiti\u00e9 de la bouteille (2cl) dans un verre et ajoutez entre 7cl et 10cl d\u2019eau tr\u00e8s fra\u00eeche. Certains aiment ajouter l'eau lentement sur un morceau de sucre pour le faire fondre, mais Claude-Alain pr\u00e9f\u00e8re la Clandestine \"au naturel\". Bonne d\u00e9gustation\u00a0!<\/p><p>Pour celles et ceux qui n\u2019appr\u00e9cient pas ce breuvage de cette mani\u00e8re, il saura parfaitement agr\u00e9menter vos plats, comme dans cette recette de risotto \u00e0 servir avec le saucisson neuch\u00e2telois.<\/p><p><span style=\"font-family: 'SketchFlow Print'; font-size: 14pt;\">Recette de saucisson neuch\u00e2telois sur risotto \u00e0 l\u2019absinthe (pour 2 personnes)<\/span><\/p><p>1\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 saucisson neuch\u00e2telois<\/p><p>0.5\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 \u00e9chalote<\/p><p>50 g\u00a0\u00a0\u00a0\u00a0 de chicor\u00e9e rouge<\/p><p>1 cs\u00a0\u00a0\u00a0\u00a0\u00a0 de beurre<\/p><p>175 g\u00a0\u00a0\u00a0 de riz pour risotto<\/p><p>0.5 dl\u00a0\u00a0\u00a0 de vin blanc<\/p><p>4 dl\u00a0\u00a0\u00a0\u00a0\u00a0 de bouillon de l\u00e9gumes<\/p><p>2 cs\u00a0\u00a0\u00a0\u00a0\u00a0 d\u2019absinthe<\/p><p>20\u00a0g\u00a0\u00a0\u00a0\u00a0 de fromage de ch\u00e8vre frais<\/p><p>Sel et poivre<\/p><p>1. Faire pocher le saucisson dans un grand volume d\u2019eau au seuil du point d\u2019\u00e9bullition durant env. 20 min.<\/p><p>2. Entre-temps, hacher l\u2019\u00e9chalote. D\u00e9tailler la chicor\u00e9e en fines lani\u00e8res. Faire suer l\u2019\u00e9chalote dans le beurre. Ajouter le riz et le faire revenir jusqu\u2019\u00e0 ce qu\u2019il soit translucide. Mouiller avec le vin, ajouter peu \u00e0 peu le bouillon et laisser cuire env. 20 min \u00e0 feu moyen, en remuant, jusqu\u2019\u00e0 obtention d\u2019un risotto onctueux mais encore ferme sous la dent. Ajouter les lani\u00e8res de chicor\u00e9e, l\u2019absinthe et le fromage de ch\u00e8vre frais, m\u00e9langer le tout. Saler et poivrer.<\/p><p>3. Couper le saucisson en rondelles et servir avec le risotto.<\/p><p>(Adapt\u00e9 de <a href=\"http:\/\/www.saison.ch\/fr\/recettes\/saucisson-sur-risotto-labsinthe\/detail\/\" target=\"_blank\">Cuisine de Saison)<\/a><\/p><p>\u00a0<\/p><p><span style=\"font-size: 18pt;\"><strong>#6 \u2013 <\/strong><span style=\"font-family: 'SketchFlow Print';\">Saucisson neuch\u00e2telois IGP, Boucherie Graf, <a href=\"https:\/\/goo.gl\/maps\/7uc3Q\" target=\"_blank\">Cornaux<\/a><\/span><\/span><\/p><p>Situ\u00e9 entre le lac de Neuch\u00e2tel et de Bienne, la boucherie Graf produit le saucisson neuch\u00e2telois IGP, dont l\u2019origine de cette d\u00e9nomination remonte \u00e0 la fin du 19e si\u00e8cle. Il se distingue de ses homologues vaudois et fribourgeois par l\u2019utilisation d\u2019un boyau de b\u0153uf (au lieu du porc). Une distinction est faite entre le saucisson et la saucisse neuch\u00e2teloise. La diff\u00e9rence r\u00e9side par leur diam\u00e8tre et l\u2019absence de courbure chez le saucisson.<\/p><p>Pour le r\u00e9aliser, Dominique Graf m\u00e9lange et p\u00e9trit la viande et le gras de porc frais et les \u00e9pices (sel, poivre, ail), puis la masse ainsi obtenue est emboss\u00e9e dans des parties distinctes d\u2019un boyau de b\u0153uf (droit pour le saucisson, courbe pour la saucisse). Une fois que les saucissons sont fabriqu\u00e9s, ils sont suspendus \u00e0 une ficelle pour s\u2019\u00e9goutter et m\u00fbrir pendant environ 12 heures et d\u00e9velopper ainsi leurs ar\u00f4mes caract\u00e9ristiques. Ils sont ensuite fum\u00e9s \u00e0 froid pendant 1 \u00e0 3 jours, uniquement \u00e0 partir de bois de r\u00e9sineux, ce qui leur donne leur couleur dor\u00e9e. La dur\u00e9e minimale pour l\u2019ensemble des \u00e9tapes, c\u2019est-\u00e0-dire du hachage \u00e0 la vente en magasin, est de 36 heures. Le cahier des charges de l\u2019Indication G\u00e9ographique Prot\u00e9g\u00e9e (IGP) d\u00e9finit un calibre de 40 \u00e0 60 mm pour un poids de 200 \u00e0 600 g. Le v\u00f4tre fait entre 350 et 400g.<\/p><p>Comment le d\u00e9guster\u00a0? Pour les moins aventureux, il faut cuire le saucisson dans l\u2019eau (\u00e9ventuellement avec un l\u00e9gume) \u00e0 75-80\u00b0C environ, pendant 35 \u00e0 40 min. Un bon conseil pour qu\u2019il n\u2019\u00e9clate pas est de le piquer en diff\u00e9rents endroits.
